Happy New Years

Happy New Years everyone !! Sorry, I haven't written much lately since I have been super busy and with this flue going around has just made it impossible to sit down and write a something but finally I have found some time.
   We had a wonderful New Years. We welcomed the new year in with some close friends and family. I have been thinking what is my New Years resolution, I came up with one and it is to shop less and budget a little more, but so far that is not going very well. It's not my fault, I'm a woman!! I go to a store I almost always walk out with something that I didn't really need. I'm going to use my next couple posts about budgeting and see how thy goes . I will research on the internet and find tips and ticks and share them.

Nathan's birthday cake recipe

I love natashaskitchen.com and her recipes are awesome !! I used her fruit cake for making Nathan's birthday cake and in the recipe I followed it mostly to a "T" except I didn't have kiwis but I did have mandarins so I used that instead and it came out delicious. Here is the recipe. 
Cake Ingredients:
  • 6 large eggs
  • 1 cup sugar
  • 1 cup all-purpose flour
Frosting Ingredients:
  • 1 cup heavy whipping cream
  • 2 (8oz) packages cream cheese, softened at room temp
  • ¾ cup sugar
Toppings/Fillings:
  • 3-4 Kiwi
  • 1 lb Strawberries
  • 1 to 1½ cup Blueberries
  • 1 cup raspberries

Instructions
  1. Butter and Line the bottoms of two 9″ cake pans with parchment paper.
  2. Preheat Oven to 350˚F.
  3. Combine 6 eggs and 1 cup sugar in the bowl of your electric mixer and beat on high speed for 7 minutes or until tripled in volume and fluffy. Sift in 1 cup all-purpose flour and fold it in with a spatula just until all of the flour is incorporated. DO NOT OVERMIX or your cake won’t rise well.
  4. Transfer your dough to your buttered and lined cake pans. Set aside.
  5. Bake at 350˚F for 22-25 minutes or until the top is lightly browned. Let the cakes cool down on wire racks, then remove from the pans.
Frosting:
  1. Beat together cream cheese and ¾ cup sugar until smooth (1 min).
  2. Add 1 cup cold heavy whipping cream and beat on high speed until fluffy (3 minutes).
Assembling your Biskvit Cake:
  1. Slice your kiwi and strawberries into thin rings/half circles.
  2. Once your cakes are fully cooled, carefully cut each layers in half using a sharp serrated knife. Place the bottom layer on a cake stand. Spread a thin layer of frosting over it. Cover with sliced kiwi and strawberries.
  3. Spread a thin layer of frosting on the next cake layer and place the frosted side down over your fruit.
  4. Repeat with the remaining layers and spread frosting over the top and sides. Decorate the top ands sides of the cake with fruit. I placed my larger fruit down first: First Strawberries, then raspberries, followed by blueberries then kiwi. I just placed berries onto the cake until it looked full and pretty. For the bottom border, I cut raspberries in half and alternated the raspberries with blueberries to make a ring around the base of the cake. You can also put kiwi slices around the bottom if you like.

Sunday Funday

Hey everyone so I know I haven't written in a while but I would love to get you all caught up to what has been happening. After my sons birthday I was just so exhausted (I did so much cooking and cleaning on Sunday) so Monday just became my lazy day. Monday was the best no cooking, eating left overs and house was still clean which was the best thing ever. (I will have to share some recipes from Nathan's birthday that tired out awesome like the recipe for his birthday cake.) 
   On Thursday I was in such a mood of inviting people and decided to invite some mommies over for brunch . I honestly don't know where I got so much energy to host a brunch after Nathan's birthday. We had so many sweets and you all know how girls are with food they barely eat anything. I had so much food or more like sweets left over. My husband was one happy person when he saw all the left overs . He came home and I thought he wanted me to cook something but he was like "No I'm good with all these left overs." 
    So today is Sunday and what we did today was go to church and we haven't been with the baby in a while and today was an experience and he was pretty good he didn't cry much and he barely slept, he maybe slept like the last 10 minutes of church which was okay for him. And afterwards we went to Sharis  to eat I was craving breakfast I don't know about you every time I go to Shari's  or Elmers I always want breakfast I don't want the regular food. I got the Denver omelette and I don't know I just didn't like it that much it was very thin and wasn't like the usual I have. And also today I got my hair done finally. Thank you to my friend that did a wonderful job.

Love spending time with family

Hello everyone!! 
So it's November 1 today and it's Friday yeah so happy it's Friday and my husband is home today and not working. Surprise surprise he usually always works Fridays and today we got to spend together as a family. It was fun we went shopping, we went to Panera bread to eat, and then we got Nathan what he's been asking for a very long time is a play kitchen. It was so funny we got home he was so happy singing happy birthday to himself jumping around while the kitchen was in the box and then as soon as my husband put the kitchen together he didn't want to play with it. We asked him what do you want us to return it and he was shaking his head yes but I think he was just tired and he just didn't know what he was saying. We'll see what happens tomorrow.

My intro

Hi everyone !
 I wanted to make this blog all about a day in my life. I want to use this blog as a journal to what happens in a day of being a mommy to two beautiful boys. It's not easy being a mommy to one but to two is definitely a challenge. Each day is so different, one day is good and the other day I just want to rip my hair out. I've learned that going out is not as easy anymore and getting ready takes sooo much longer.
       I'm also a young mommy and have been married for 4 years already to my awesome husband Max. These 4 years have flown by so fast that the other day I was like seems just yesterday I was planning my wedding and stressing out about everything, and now we have 2 kids and it's been 4 years.
      Like I said before I have two beautiful boys of the age 3 and 5 months. My 3 year olds name is Nathan, and my goodness is he a character. He loves watching "Curious George" and when he hears some up beat music come on he starts dancing and does that boy have some moves. Then there's my 5 month old baby boy Lucas and he is precious little boy. He is such a smiler and loves attention.
